Description
It all started with the renovation of the Eco Park Hotel Azalea according to ecological principles to respect the environment and contribute to sustainable development. The focus was set on food and the responsible procurement compatible with the needs of an ecological hotel and its guests.

The idea is based on the implementation of a vegetarian and vegan cuisine typical of a vegetarian hotel and the use of organic and regional products in the traditional cuisine.
The fact that the production of meat creates a greater amount of pollution compared to the production of vegetables and grains made the owners renounce meat as much as possible.
In search of dietary wellness, the Eco Park Hotel Azalea was inspired by the Steiner philosophy where the plant that nourishes humans is in a reverse relationship with them and every day of the week is inspired by a different grain.
Besides the menu, you find a colorful and imaginative buffet where vegetables and seeds bring to life an inviting food choice accompanied by bread and flatbreads made with the antique grain.
The restaurant is open to exterior guests on request.

Venus rice with lemon and crispy green celery, pea cream, agretti (salted cabbage) and cherry tomato confit
For 4 people:
- 240 g rice Venus
- 2 bouquets
- 300 g peeled peas
- 3 cm leek
- 1 lemon
- 1 small green celery heart

- 16 cherry tomatoes
- 20 g brown sugar
- Salt, extra virgin olive oil
- Thyme, 1 clove of garlic
- Boil the rice in salted water. Season with extra virgin olive oil, grated lemon zest, 1 tablespoon of juice and browned celery.
Coarsely chop the leek, fry in 1 tablespoon of oil and 1 tablespoon of water, add the peas and cook at the same time. Mix everything.
Wash the agretti, blanch them in salted water for 2 minutes and then immediately put them in water and ice.
Cut the bottom of the tomatoes into a cross and blanch them in boiling water for 2-3 minutes. Drain and peel the tomatoes, leaving the skin attached to the side of the stalk. Place them on a baking tray, sprinkle them with salt, oil, brown sugar and thyme. Scent with 1 clove of garlic cut into fillets. Bake in the oven at 120°C for 100 minutes, turning them halfway through the cooking time.
Prepare all hot ingredients when serving. Arrange 2 tablespoons of pea cream on the plate, place the rice in the middle using a cookie cutter, place a nest of agretti dressed with oil and lemon and 1 confit tomato. To taste, surround the other tomatoes and season with a dash of oil.
