Martin Müller's fine Weissensee fish, which is only a stone's throw away, guarantees exactly this quality, as do the soft sheep's cheese from Seppi Nuart or the organic, mild dairy products from the house Jakober. And everything is prepared and created with love, calmness and a lot of creativity.

The season sets the tone
One of the most challenging sustainable goals of Haubenkoch Hannes and his whole team is “import-self-sufficiency”: Therefore, ten years ago the restaurant and the hotel started to renounce step by step from the import of goods. This was the birth of the project “Generation Awareness“.

In the meantime, the evening menu of the Slow-Food-Restaurant is 99% free from imported goods – the seasons determine what comes on the plate. The royal wild strawberries are only served around summer, while in winter the bitter-sweet, fiber-rich Kletzen are in season. This makes the taste and smells more intense, honest and above all healthier.
A real treat for the palate – and on top of that sustainable: the food at the Restaurant am Weissensee is goof for the conscience, the environment, and also for Jeune Restaurateur chef Hannes Müller.

Mission Statement and principles of the kitchen
- Each dish with its traditional and typical ingredients lets the guests feel the alpine See-Hochtal with all senses.
- Mindfulness is the highest premise.
- Only products from Austrian agriculture are used – seasonal and of the highest quality. This also applies to wild herbs & wild plants. The only exception to this is food preserved by the Forelle, i.e. pickled, frozen, dried and fermented products.

- Whenever possible, goods are purchased from farmers in the immediate vicinity. The question of whether or not these are certified organic is not the main focus, but ongoing communication about the way in which animals are kept and fed regarding meat products.
- The close cooperation with fruit, vegetable and cereal farmers is also based on transparent and comprehensible information on cultivation and harvesting conditions.
- Fair prices to appreciate the high-quality work of the farmers.
- As far as possible, no middlemen are involved so that the added value reaches the farmers.
- Abstention from international luxury products.
- Demonstrably fair produced products of the Alps Adriatic region, such as olive oil or balsamic vinegar.
- Food is valuable, therefore additional use for waste and unused parts.
- Waste management includes strict waste separation, the production of biogas, the composting of vegetable and fruit residues and the production of feed for the domestic pigs.
- The kitchen is largely supplied with electricity from the sun using the in-house PV system.
- Also, the wood stove or wood bread oven has a special meaning for the production of the individual dishes & products
